while the ground cumin sizzles
just before i add the onions and saute until clear
which is just before i add the garlic
and so on

an exercise i tell myself
in patience as it takes three or so  hours
to work through a gallon bucket
and how it is serious preactice
for me to not keep looking at the slowly slowly
(handful by handful) diminishing bucket
of not-yet-winnowed seed
